Now time for my Kitchen Secrets..…😉😍
When you are preparing chaat, you’ll end up with leftovers in many forms. It can be filling, chutneys or puris. I had excess puris. My chutneys ran out, i was lazy to prepare all the 3 chutneys again. I was wondering for a week what to do with the leftover chaat puris / golkappas from Dahi Sev Puri or Sev Puri I was preparing Vegetarian Tacos for the guests that week. Suddenly an idea struck me like a lightning. Why don’t I try a fusion between Mexican and Indian. That’s how this mini bites Tacos Golkappas evolved.
This Indian hors ď oeuvre will become a hearty snack for your whole family, you can’t resist making again and again. Interesting part of this recipe is Zero cooking, if the Refried beans and Mexican Salsa (or Instant Salsa) are prepared a day before or if there are leftover after being used in Tacos. There were 16 puris / golkappas of pani puri left from Dahi Sev Puri or Sev Puri. I took 1 cup of Refried Beans.
And 1 cup of Mexican Salsa (or Instant Salsa). Use the hyperlink for their respective recipes.
Also I took ¼ cup of finely chopped mixed colour capsicums, onion and pineapple and ¼ cup of shredded Mozzarella cheese.
Now assemble the puris / Golkappas in a plate. Take a puri, gently break the center piece of the puri by pushing with your fingers. Stuff a tsp of refried beans in the center, a tsp of salsa on top of it.
Then a tsp of mixed capsicum, onion and pineapple.
Finally add a topping of Mozzarella cheese.
Similarly, stuff rest of the puris and place them in the air fryer or microwave oven or OTG oven.
Grill them till the cheese melts.
Or simply, place them in a panaiyaram pan (shared the pic for reference), it’s a pan where it has 9 – 11 hollows. Place these puris in the hollows and heat the pan in medium low flame, close the lid. After a minute or 2, open the lid, you can see the molten cheese.
Serve it immediately on a plate drizzled with some tomato ketchup.
