I had 2 cups of leftover Jeera Rice.

I pulsed the rice in the blender with a pinch of salt (I ignored adding any spices as jeera rice had pepper, jeera, ginger, garlic, and green chilli). Make sure you remove whole spices in it.

Prepare a paste with a tbsp of all-purpose flour(maida), a tbsp of corn flour, pinch of salt, and 2 ½ tbsp of water. Keep ¼ cup bread crumbs, pulsated leftover jeera rice and little oil on a working table.

Grease your hands with oil, make small marble-sized balls from the mashed rice.

Roll it and dip it in the flour paste. Strain excess flour.

And immediately coat with bread crumbs.

Arrange the balls in a plate and refrigerate for 30 minutes minimum.

Then deep fry it.

Drain the excess oil with kitchen tissue. Alternatively, you can use air fryer to avoid deep frying. Crispy bites of Rice koftas are ready to serve with green chutney, garlic chutney, or any other dip of your choice.

These Rice koftas can be made with any other leftover rice, provided its spiced. If its steamed rice, add some spices while churning in the blender. Another tip, if your rice has turned mushy due to miscalculation of water or the rice quality, you can still make these rice koftas… 😉😋😋
