Nutrient Mix Powder

I would name this powder as Nutrient-rich mix as it’s abundant in all micronutrients. It contains 3 highly nutritious, main ingredients. I can say it’s a powerhouse of Iron. Yup, it’s packed with minerals and vitamins, consuming this regularly will serve your daily requirements.

Moringa leaves, Curry leaves and Black sesame seeds are the protagonists in this powder.

Moringa contains Vitamin A, B1 (thiamine), B2 (riboflavin), B3 (niacin), B-6, Folate and ascorbic acid (vitamin C), Calcium, Potassium, Iron, Magnesium, Phosphorus, zinc.

Curry leaves are rich in Vitamin A, B, C and B2, also good sources of iron and calcium.

Black sesame seeds are rich in Calcium, Magnesium, Phosphorus, Copper, Manganese Iron, Zinc.

Ingredients:

Curry leaves-2 cup

Moringa leaves-1 cup

Sesame seeds-1/2 cup

Coriander seeds-1 tbsp

Pepper-1 tsp

Cumin seeds-1 tsp

Asafoetida-1/2 tsp

Salt-as reqd

Instructions:

  1. Clean, wash, and dry Curry leaves & Moringa leaves separately on kitchen tissue.
  2. Dry roast them on a pan till they turn crispy.
  3. In the same pan, dry roast sesame seeds, coriander seeds, pepper, and cumin seeds one by one, each for a minute.
  4. Switch off, add asafoetida powder & salt.
  5. Grind everything into a slightly coarse powder.
  6. Have it as an accompaniment to idli, dosa or mix with rice along with gingelly oil/ghee.

Notes:

  • It’s good to remove excess moisture from Curry leaves & Moringa leaves, this helps the leaves to turn crispy while roasting. If it’s wet, they tend to stick to each other, and roasting becomes difficult.
  • You can clean, wash and dry the leaves a day before, which helps the leaves to dry completely.
  • Daily, consume either with rice or idli to meet your daily requirement for micronutrients.
  • Especially with rice, mix the powder along with gingelly oil /ghee and let it rest for some time. It tastes heavenly when it’s pre-mixed and consumed later.
