You can make a quick version of Kathi Roll using leftover Green chutney and Garlic chutney as a spread with slices of Cucumber, Carrot, Olives and cheese… Instant Kathi Roll is ready for kid’s lunch box…👫🍱

Take the roti, smear Garlic / Lahsun ki chutney sufficiently.
Then smear with leftover Green chutney generously.
Add carrot, cucumber and olive juliennes as required.
Top with mozzarella cheese (quantity is up to your choice); finally, add tomato ketchup and add more cheese on to it.
Seal it tightly from both sides to make it as a roll (Refer video for folding).
Later microwave or air fry or toast it n tawa till the cheese melts inside. (optional step).
Kathi roll is ready to serve. It’s the best choice for kid’s lunch box. Healthy version can be made with wheat or any small millet rotis as wraps.

Ingredients:
Roti / Arabic bread – 2
Leftover Green chutney – 1 tbsp
Garlic chutney – 1 tbsp
Tomato ketchup – 2 tbsps
Carrot julienne – 2 tbsps
Cucumber julienne – 1 tbsp
Green Olives – 1 tbsp
Mozzarella cheese – 2 tbsps
Instructions:

- Add carrot, cucumber and olive juliennes as required.
- Top with mozzarella cheese (quantity is up to your choice), finally add tomato ketchup and add more cheese on to it.
