I assure there are faded chances of gravy or fried potato eggs to be leftover from Paneer Stuffed Potato Gravy. There are chances you’ll be left with paneer stuffing as the size of the stuffing vary with individual. Here, I came up with another out of the box dish from the paneer leftover. I’m transforming this Indian paneer to Italian Arancini balls with a twist of paneer in the place of cheese, an art of fusion.

Ingredients:
Leftover paneer stuffing (from Paneer Stuffed Potato Gravy) – ¼ cup
Leftover Jeera rice – 2 cups
For Paste:
Corn flour – 1 tbsp
All-purpose flour / Maida – 1 tbsp
Salt – to taste
Water – 2 ½ tbsps
For Coating:
Panko crumbs – ¼ cup
Oil – To fry
Instructions:
- I was left with ¼ cup of leftover Paneer from Paneer stuffed potato gravy.
- I also had 2 cups of cooked Jeera rice (day before I prepared jeera rice for lunch). You can use normal leftover rice cooked at home. Blend the jeera rice in the jar with a whip. Don’t add water. As jeera rice is seasoned, I didn’t add any salt or spice. If you have plain cooked rice then add green chilli / black pepper, ginger, garlic, salt to your taste and dry grind in the mixer grinder.
- Mix a tbsp of corn flour and a tbsp of all-purpose flour / maida with a pinch of salt and make a paste with 2 ½ tbsp water.
- Take ¼ cup of panko crumbs for coating. Now keep everything on worktable.
Smear oil in your hand. Roll a lemon sized ball of rice. Make a hollow in the centre and stuff the paneer.
Seal the ball and dip in the flour mixture, drain the excess coating. Coat with panko crumbs on all sides. Similarly do the same for the rest of the balls.
Then deep fry in the oil. You can alternatively use an air fryer as well.
Serve with Green chutney or Garlic chutney. Desi style Arancini balls will become a savoury treat to your loved ones.
