Easy Corn Halwa-2 ways

Diwali a week away, lot of hustle bustle around the house and town. Apart from cleaning, shopping, preparing sweets and snacks takes the priority in the list.

Here, Sinfully-desilicious has come up with easy going Halwa recipe series that too turning into a healthy treat with no guilt. Sounds promising‼️‼️‼️

Yes, ‘MILLET HALWA’ is the theme, the best way to celebrate this Diwali with less calorie guilt.

First comes, Corn kernels with which I prepared a quick halwa recipe in 2 ways,

one coarsely ground,

another smoothly ground.

Both had a different texture and result. Believe me, taste was absolute heaven, especially the smooth one, resembled Badam Halwa😍

Ingredients:

Corn Kernels, boiled, ground -1/2 cup

Semolina/Rava-1/2 tbsp

Ghee-1 tbsp+ ½ tbsp

Full fat Milk-¼ cup

Homemade Khoya-¼ cup

Jaggery powder -1/8 cup

Mixed Nuts Powder-½ tbsp

Cardamom powder-¼ tsp

Saffron- a pinch

For Homemade Khoya-

Milk powder-1 ½ cup

Milk- ¾ cup

Ghee-3 tbsp

Yields 1 cup of soft khoya

Instructions:

  1. Boil Corn Kernels, coarsely or smoothly grind them, (after grinding should measure ½ cup). Just blanching is enough for frozen corn. If fresh sweet corn is used, boil for a few more minutes till softened.
  2. Heat a thick pan with 1 tbsp ghee, and roast Rava for a minute on med flame.
  3. Add crushed Corn kernels, and sauté for 4-5 minutes till the raw smell goes off.
  4. Add milk, cook it open for a minute, then close and cook for 7 mins on low flame.
  5. Add homemade khoya (For Khoya’s recipe, click here, shared in Makkan Peda Recipe), jaggery powder, mixed nuts powder, cardamom powder, and saffron, mix well and simmer for 8-10 mins on low flame, till it comes as a solid lump.
