Yes, ‘MILLET HALWA’ is the theme, the best way to celebrate this Diwali with less calorie guilt.
First comes, Corn kernels with which I prepared a quick halwa recipe in 2 ways,
one coarsely ground,
another smoothly ground.
Both had a different texture and result. Believe me, taste was absolute heaven, especially the smooth one, resembled Badam Halwa😍

Ingredients:
Corn Kernels, boiled, ground -1/2 cup
Semolina/Rava-1/2 tbsp
Ghee-1 tbsp+ ½ tbsp
Full fat Milk-¼ cup
Homemade Khoya-¼ cup
Jaggery powder -1/8 cup
Mixed Nuts Powder-½ tbsp
Cardamom powder-¼ tsp
Saffron- a pinch
For Homemade Khoya-
Milk powder-1 ½ cup
Milk- ¾ cup
Ghee-3 tbsp
Yields 1 cup of soft khoya
Instructions:
- Boil Corn Kernels, coarsely or smoothly grind them, (after grinding should measure ½ cup). Just blanching is enough for frozen corn. If fresh sweet corn is used, boil for a few more minutes till softened.
- Heat a thick pan with 1 tbsp ghee, and roast Rava for a minute on med flame.
- Add crushed Corn kernels, and sauté for 4-5 minutes till the raw smell goes off.
- Add milk, cook it open for a minute, then close and cook for 7 mins on low flame.
- Add homemade khoya (For Khoya’s recipe, click here, shared in Makkan Peda Recipe), jaggery powder, mixed nuts powder, cardamom powder, and saffron, mix well and simmer for 8-10 mins on low flame, till it comes as a solid lump.
