Homemade ice-cream, with just 3 main ingredients and you don’t even need an ice-cream churner, wow, isn’t that just incredible to hear. I too felt the same when I was first introduced to this recipe in a kitty party organized by my Bahrain friends’ group, RGs (Rocking Gals). My friend’s daughter, Priya dazzled us with this homemade ice-cream. Thanks dear, for sharing this recipe with me.

If you have kids at home when you prepare this homemade hearty dessert, they’ll relish it with great gusto. As a mom, you’ll be content only when you feed your kids with no guilt.

Even a newbie can make this successfully with few nuances and techniques to adhere to. Just 2 ingredients involved and 3rd ingredient, can vary according to your choice. The only tool you need is a hand mixer. 

Those 2 magical ingredients are Whipping cream and Condensed milk. 3rd ingredient is coffee granules as implied in the name of the recipe.

As I mentioned early 3rd ingredient can be flexible, you can go for mango chunks, or any other tropical fruit or Nutella or cookies or chocolate. I chose coffee flavour as everyone in my family are coffeeholics…☕☕💘💘. This ice cream will be so creamy, rich in texture, and in addition to that the coffee flavour kicks it up a notch.

The second ingredient, condensed milk, is almost available in all stores. You may not find any difficulty in getting it.

Now coming to the prime ingredient Whipping cream, you’ll be spoiled for choices as the cream aisle in the stores have many options. I highly recommend you to use Heavy cream in the place of whipping cream. When I was shopping ingredients for this recipe, I couldn’t find the heavy cream in my store. So, I ended up buying whipping cream. The reason why I insist heavy cream is because of its high milk fat content. Heavy cream or heavy whipping cream contains at least 36% or more milk fat which gives you stiff peaks and the ice-cream turns creamy. While Whipping cream or Light Whipping cream contains 30- 35% milkfat which gives only soft peaks which may slightly affect the creaminess of the ice-cream. Still, if you are not lucky enough to get heavy cream, no worries, pick the whipping cream and go ahead with the recipe. You’ll get more or less equivalent result as my ice-cream is a proof for it (check the pictures and video). To conclude, whichever cream you use, more important is to chill your cream, mixing bowl and beaters well before use as it will assure a faster and desirable end product.

Keep the mixing bowl, beater in the freezer for a minimum of 10 minutes. Meanwhile, mix 3 tbsp of coffee in 1 ½ tbsp of hot water to get a thick decoction. You can actually add 2 tbsp water or a bit more to make it thin decoction, but make sure it’s not too runny. Keep the condensed milk out of the fridge. Take the whipping cream from the refrigerator just before you start whipping. Don’t keep it at room temperature for a long time. Now take the mixing bowl, beater from the freezer, and start whipping the whipping cream.

Keep the speed from medium to high till you get peaks. It may take 5 – 6 minutes depending on the quality of whipping cream and electric hand mixer you have.

Then, add the condensed cream.

And the coffee decoction.

Combine it well for another 3 – 4 minutes in the hand mixer.

Now transfer this into an airtight container of your choice.

Garnish with chocolate chips or KitKat crumbles or cookie crumbles. Freeze it for a minimum of 6-8 hours or overnight for best results. After overnight freezing, keep the container out for a few minutes and once the cream is a bit softened, scoop it.

And relish the 3 ingredient Coffee Ice-cream.

Ingredients:

Heavy cream / Whipping cream – 2 cups (500 ml)

Condensed milk – 1 can (397 gm)

Coffee granules – 3 tbsps (mixed in hot water)

Instructions:

  1. Keep the mixing bowl, beater in the freezer for a minimum of 10 minutes.

  6. It may take 5 – 6 minutes depending on the quality of whipping cream and electric hand mixer you have.
  7. Then, add condensed cream and coffee decoction, combine it well for another 3 – 4 minutes in the hand mixer.
  8. Now, transfer this into an airtight container of your choice.
  9. Garnish with chocolate chips or KitKat crumbles or cookie crumbles.
  10.  Freeze it for a minimum of 6-8 hours or overnight for best results.
  11. After overnight freezing, keep the container out for a few minutes and once the cream is a bit softened, scoop it and relish the  3 ingredient Coffee Ice-cream.

Notes:

  • As I mentioned above, either go for Heavy cream or whipping cream whichever available at your stores.
  • The reason heavy cream is preferred is due to their high milk fat content which gives stiff peaks.
  • The fat content in the cream and the peaks after whipping enhances the creamy texture of the ice-cream. 
  • Take the Whipping cream just before you start your whipping, keeping in room temperature for a longer time will not give the desired peak while whipping.
  • Also, if you don’t get peaks, you tend to over whip which will lead to curdling of the cream.
  • The more the cream is chilled, the better the peaks.
  • You can make variations by excluding coffee and incorporating other choices like mango chunks, or any other tropical fruit or Nutella or cookies or chocolate.
  • This quantity will yield roughly 8 scoops. You can also double up the quantity if you plan for any party or get together.
