Navratri is very close to my heart as it celebrates & honour the Shakthi/Divine Feminine. This 9-day celebration ends with the celebration of the pinnacle victory of Durga, as Vijayadasami.
Malpua, a sweetened pancake, is the best offering to Tridevis during Navratri. Here, I incorporated Banana, as it’s the perfect offering to God. It has evolved with various recipes & ingredients across Indian subcontinent. It’s best served when hot along with Rabri. I prepared Banana Rabri which very well complemented the Banana Malpua. Ingredients:
For Batter-
Reduced milk-1 ¼ cup (refer 👇)
Cardamom powder-1 tsp
Fennel powder-1 tsp
Condensed milk-2 tbsp
Banana puree- ½ cup (refer 👇)
Unsweetened Khoya-¼ cup
All-purpose flour-1 cup
Sooji- ¼ cup
Milk-2 tbsp
For Syrup-
Sugar-1 cup
Water-1 cup
Cardamom powder- ½ tsp
Saffron-a pinch
Lemon juice-2-3 drops
Instructions:
- 🥞Reduce 2 cup milk to 1 ¼ cup by collecting the cream formed.
- 🥞Prepare Banana puree by grinding 3-4 tiny bananas with 2 tbsp milk.
- Mix everything mentioned under batter except 2 tbsp milk and whisk for 5 minutes and let it rest for minimum 1 hour.
- Prepare sugar syrup by mixing everything under syrup except lemon juice, and simmer till it reaches sticky or 1 string consistency. Now add few drops lemon juice to prevent crystallization of sugar on cooling.
- Add 2 tbsp milk to resting batter (if thickened) to get pouring consistency (like dosa)
- Heat ghee n a pan, drop small scoop of batter in med flame, fry on both sides.
- Drain and dip in sugar syrup for 5 mins.
- Serve hot with Banana Rabri, garnished with pistachios & rose petals.
